Place any type of beans in a stainer and rinse well under cold water.
Soak the beans in cold water for 6-12 hours, preferably overnight.
Drain and rinse the soaked beans.
Add the beans to a heavy bottom pot and add enough water to cover the beans.
Bring to a boil. Partially cover, turn down to a simmer and cook until tender. Depending on the bean, this can take 45 minutes to 1½ hours. Be sure to taste to ensure the proper doneness.
Drain and rinse.
