The Best Gluten-Free Chocolate Chip Cookies
Serves: 12 cookies
  • 1½ cup almond meal
  • ¾ cup almond butter
  • ¾ cup coconut sugar or brown sugar
  • 1 egg
  • 1 tsp baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  • ½ cup chocolate chips
  1. Pre-heat oven to 350. Line a baking sheet with parchment paper.
  2. In the bowl of an electric mixer, add almond butter, egg, sugar and vanilla and mix well.
  3. In a small mixing bowl, whisk together almond flour, baking soda and salt.
  4. Slowly add dry ingredients to mixer and mix well. Mixture should be grainy and a little dry.
  5. Mix in chocolate chips.
  6. With your hands, roll dough into about golf ball sizes and then flatten. The dough will be a little crumbly, but just squeeze it together. Place on prepared baking sheet.
  7. Bake for 10-12 minutes. Remove from oven and let cool completely before eating.
