Turkey Slopping Joes

Ingredients
  • 1 Tbsp olive oil
  • ½ cup minced carrots, about 2 carrots
  • 1 cup finely chopped onion (about 1 medium onion)
  • ½ cup finely chopped celery, about 2 stalks
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • fresh ground pepper
  • 1¼ lb ground turkey
  • ½ cup ketchup
  • 1-15 ounce can tomato puree
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp red wine vinegar
  • 2 Tbsp brown sugar
  • ½ teaspoon dried thyme
  • 4 hamburger buns
Instructions
  1. Heat oil in a large cast iron skillet over medium heat.
  2. Add the onions, carrots, and celery and saute until soft, about 6 minutes.
  3. Add the garlic, salt and pepper and cook about 2 more minutes.
  4. Add the turkey and cook, breaking the meat apart into small pieces with a wooden spoon, for about 10 minutes or until meat turns white.
  5. Add ketchup, tomato sauce, Worcestershire sauce, vinegar, brown sugar and thyme and mix together well.
  6. Bring mixture to a boil, reduce heat and simmer for 20 minutes. remove from heat.
  7. Cut buns in half, lightly toast and pile with sloppy joe mixture.
