Coconut Curry Shrimp
 
 
Ingredients
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons coconut oil
  • 2 teaspoons garam masala
  • 1 teaspoon curry powder
  • 1 teaspoon salt
  • 1 teaspoon tamarind paste
  • ½ cup coconut paste
  • 2 tablespoons fresh cilantro
Instructions
  1. Combine masala, curry powder, tamarind paste, and salt in a medium bowl. Add shrimp and toss well. Cover and refrigerate for 1-2 hours.
  2. Heat oil in a large skillet over medium-high heat. Add shrimp in a single layer, reserving marinade. Sear shrimp 1-2 minutes, per side.
  3. Add coconut milk and reserved marinade and stir well. Cook about 3 more minutes, until sauce is thick and shrimp are cooked.
  4. Garnish with cilantro and serve immidiately.
