Asian Turkey Meatballs

Ingredients
  • •1 pound ground turkey breast
  • •2 Tbsp tamari or soy sauce
  • •1 garlic clove, minced
  • •1 Tbsp peeled and grated ginger
  • •1 egg, lightly beated
  • •2 scallions, white and light green part chopped
  • •1/2 cup bread crumbs (I use gluten free)
  • •1/4 cup finely chopped cilantro
  • •1/2 tsp salt
  • •fresh ground pepper
  • Sauce
  • •4 Tbsp tamari or soy sauce
  • •2 Tbsp peanut butter
  • •1½ Tbsp honey
  • •2 tsp rice vinegar
  • •1 garlic clove, minced
  • •2 tsp sesame oil
Instructions
  1. Preheat oven to 400 degrees F.
  2. Lightly scramble the egg in a medium bowl. Add all the other ingredients except the turkey meat and mix well. Let mixture sit for 10 minutes. Add the turkey and mix just until all ingredients are incorporated. With wet hands, form small meatballs (about the size of a golf ball) by rolling a spoonful of the mixture between your palms.
  3. Arrange on a parchment lined cookie sheet and bake for 20-25 minutes, until browned and cooked through.
  4. While the meatballs are cooking, whisk all the sauce ingredients together in a small bowl.
  5. Serve with toothpicks for dipping sauce.
