1 cup sliced mushrooms (cremini or brown), optional
4 eggs, lightly scrambled
2 Tbsp olive oil or butter
1 tbsp salt
fresh ground pepper
Instructions
Wash the spinach and put it in a pot with ¼ cup water. Cover pot and steam over medium low heat for about 10 minutes. Drain in colander, squeezing out extra water. Place on cutting board and roughly chop.
Push the meat mixture to the side of the skillet and pour in the eggs on the other side. Lightly scramble the eggs on one side. Once cooked, gently incorporate the eggs and the spinach into the turkey mixture.
Season with salt and pepper and adjust if neccessary
