Mexican Brown Rice
 
 
Ingredients
  • 1 cup brown rice
  • 1 tbsp butter or olive oil
  • ½ yellow onion, minced
  • 2 cups water or broth
  • ½ tsp cumin
  • ½ tsp chili powder
  • ½ tsp salt
  • 1 tbsp tomato paste
Instructions
  1. Rinse rice well in a strainer.
  2. Heat oil or butter in a pot over medium heat. Add cumin and chili powder and let bubble for a minute.
  3. Add onion and cook until soft, about 5 minutes.
  4. Add rice and coat well.
  5. Add water or broth and tomato paste and bring to a boil.
  6. Reduce heat to a simmer, cover and cook for 40 minutes, until all the liquid is absorbed and rice is cooked.
