New Moon Five ā€œCā€ Salad

Ingredients
  • ½ small red cabbage, shredded
  • ½ small green cabbage, shredded
  • 2 carrots, peeled and grated
  • ½ bunch cilantro, stemmed and roughly chopped
  • ½ cup cashews (raw or roasted), roughly chopped
  • ½ cup currants
  • Dressing:
  • 2 tablespoon sesame oil
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon rice vinegar
  • ½ teaspoons sugar or 1½ tsp honey, optional
  • Salt
Instructions
  1. Put all salad ingredients in a large bowl.
  2. Whisk together the dressing ingredients and pour over salad. Toss well and serve
