Coconut Rice
- 2 Cups basmati or jasmine rice
- 2 cups water
- 1½ cup coconut milk
- 2 tsp brown sugar
- 1 tsp salt
- Rince rice well in a colander and put in a pot over medium heat.
- Add water, coconut milk, sugar, and salt and bring to a boil.
- Reduce heat to a simmer and cover.
- Cook for about 15-20 minutes until all liquid is absorbed.
