Breakfast Frittata Muffins

Ingredients
  • 8 eggs
  • 1 cup milk
  • 2 tablespoons melted butter
  • 5 bacon strips, cooked and crumbled
  • 1 cup grated cheddar cheese (you can also use feta, mozzarella)
  • 1 cup baby spinach (optional)
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground pepper
Instructions
  1. Pre-heat oven to 350.
  2. Grease a muffin pan well and set aside.
  3. In a medium bowl, whisk together eggs, milk, cheese, butter, bacon, spinach (if using), salt and pepper.
  4. Using a measuring cup poor mixture into each muffin cup until it is about ¾ full.
  5. Bake for 20-30 minutes or until center is set.
