Gluten-Free Blondies
 
 
Serves: 12 blondies
Ingredients
  • 3 cups almond meal/flour
  • 1 tsp baking soda
  • ½ tsp sea salt
  • ¼ cup coconut oil
  • ¼ cup maple syrup
  • 1 whole egg
  • 2 egg whites
  • 1 tsp vanilla
  • 1 cup chocolate chips
Instructions
  1. Pre-heat oven to 375.
  2. Line a 8 by 12 baking dish with parchment paper.
  3. Combine almond meal, baking soda and salt in medium mixing bowl.
  4. Cream coconut oil and syrup together in a mixer for about 5 minutes. Add egg and egg whites and vanilla and mix about 2 minutes more. Scrape down sides of bowl and mix one more minute.
  5. Slowly add dry ingredients into the wet mixture and mix for another minute.
  6. Add chocolate chips and mix until combined.
  7. Pour mixture into pan and spread evenly, smoothing out top.
  8. Put in oven and bake for 20-25 minutes, until top is golden brown and middle is set.
  9. Remove from pan, let cool and then cut into squares.
