Turkey Meatloaf “Muffins”

Turkey Meatloaf "Muffins"

Serves: 12-16 muffins
Ingredients
  • 1 yellow onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • fresh ground pepper
  • 4 tablespoons worcestershire sauce
  • ½ cup chicken stock
  • 1 t tomato paste
  • 2 pounds ground turkey
  • ¾ cup bread crumbs
  • 2 eggs, lightly beaten
  • ¾ cup ketchup
Instructions
  1. Preheat oven to 325 degrees.
  2. Heat olive oil In a large sauté pan over medium heat
  3. Add the onions, salt, and pepper and cook until soft, about 10 minutes. Add the worcestershire sauce, chicken stock and tomato paste and mix well. Allow to cool to room temperature.
  4. Combine the turkey, bread crumbs, eggs and onion mixture in a large bowl. Mix well.
  5. Oil a muffin pan and fill each cup with mixture. Spread about 1 tablespoon of ketchup evenly on top. Bake for 45 minutes or until cooked through.
