The Perfect Black Bean Turkey Chili

Chili night is pretty much a weekly thing in our house.  It is another one-pot wonder that is perfect for the colder months. Full of protein and fiber, it is a compete, nutritious meal for the whole family.  I have tried many versions, but this one seems to be the biggest hit.  It is super easy, light and has just the right amount of seasonings.  If you have the time and think ahead, make sure to cook your own beans for an extra nutritional punch.  You can also add jalapeño if you want to kick it up a notch, but I tend to make mine more mild for the kids.  Enjoy!

Black Bean Turkey Chili

Serves: 4-6
Ingredients
  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • ½ tsp salt
  • 1 (28-ounce) can diced tomatoes or crushed tomatoes
  • 1 cup chicken stock
  • 2-15 ounce can black beans, drained and rinsed (or about 1½ cup cooked beans, see below)
  • avocado, cilantro, sour cream and cheese for toppings
  • 1 cup frozen corn kernels, optional
Instructions
  1. Heat oil in a large heavy pot over medium heat.
  2. Add onion and cook until soft and translucent, about 5 minutes.
  3. Add garlic and cook until fragrant, about 2 minutes.
  4. Add spices and salt and stir to mix well.
  5. Add turkey meat and cook, breaking up the meat with a wooden spoon, until white throughout, about 5 minutes.
  6. Stir in the tomatoes and tomato puree and bring to a boil.
  7. Reduce to a simmer and cook over low heat, stirring occasionally, until thickened, about 45 minutes. Add beans and corn, if using, and simmer for another 15 minutes.
  8. Serve in big bowls topped with cilantro, cheese, avocado and sour cream.

How to Cook Dried Beans

Serves: about 2 cups cooked beans
Ingredients
  • 1 cup dried beans
  • filtered water
Instructions
  1. Place any type of beans in a stainer and rinse well under cold water.
  2. Soak the beans in cold water for 6-12 hours, preferably overnight.
  3. Drain and rinse the soaked beans.
  4. Add the beans to a heavy bottom pot and add enough water to cover the beans.
  5. Bring to a boil. Partially cover, turn down to a simmer and cook until tender. Depending on the bean, this can take 45 minutes to 1½ hours. Be sure to taste to ensure the proper doneness.
  6. Drain and rinse.

    SO GOOD! AND IF YOU LIKE SPICY…ADD IN A LITTLE BIT OF MY FAVORITE HOT SAUCE ON TOP TOO! I AM THE FOURTH BOY AND THIS IS WHAT I DID!
